A Spring Paleo Salad
Looking at the Paleo meal pictures on the gym’s whiteboard, I saw something that look VERY familiar — my favorite salad dressing recipe from Whole Foods is something Kristal and I have in common! Hopefully you’ve taken a minute at the gym to take a look at these recipes.
The reason I like this one so much is that you make the salad dressing from avocado … which has its ups (it’s quick & tasty and can be used on any salad really) and it’s downs (because it’s avocado, it does brown a bit, so you should make what you plan to use vs. store leftovers). With strawberries and asparagus so plentiful in the stores at this time of year, give a though to giving it a try!
Spring Salad with Strawberries and Creamy Orange-Avocado Dressing

Ingredients
3 green onions, roughly chopped
1/2 avocado, peeled and pitted
1/2 cup orange juice
1/8 teaspoon sea salt
1/8 teaspoon ground black pepper
3 ounces spring greens or mesclun mix
1 cup sliced fresh strawberries
1/2 pound asparagus, trimmed and sliced into strips with a vegetable peeler
Directions
Puree green onions, avocado, juice, salt and pepper in a blender or food processor until smooth to make a dressing.
In a large bowl, toss greens, strawberries and asparagus together. Transfer to plates, drizzle with half the dressing and serve.
Extra dressing will keep one day refrigerated.
Week 4 Challenge & We’ve Got a Winner for Week 3!
The 45 Day Paleo Challenge has been hitting the road this past week – Ryan at the Rock n Roll marathon in Portland, Kevin’s in Japan and Nina’s in California – who else has been on the road during the Challenge? How is ‘eating on the road’ going?
And now for the Fourth Weeks Paleo Challenge:
Work on a weakness for 15 minutes at a time, 3 x this week.
- Pick a physical weakness and tell Jesse or Randy what it is
- You may practice any skill that you want to get better at. Work on that weakness for 15 minutes at a time x 3 times this week on your own time (it’s not part of warm-up or WOD time)
- You’ll need to work around classes to get the 15 min x 3 times in around the gym so Jesse or Randy can give feedback if necessary.
- Record your workout time & dates on your food log
- Turn it in by high noon next Saturday in order to be eligible for the prize drawing!

If you’ve heard the rumors – yes, they are true … the gym has been invaded by Land Sharks. “Bruce” is his name and he was spotted swimming through the gym Friday night.

Bar Hoppin’
What’s there to do on a Friday night in downtown Everett? If you’re part of the CFE 6:30 class, you grab a barbell, a kettle bell and you go bar hoppin’!
Under Randy’s tutelage, take a look at what Gayl, Ally, Caitlan, Austin, Aleah, Norm, Robby, and Art were up to (and I do mean up! some of those bar lifts were amazin’ – going faster than the speed of my camera given the lighting of the gym – whoo hoo!) – notice all the great squats & high elbows and bars a flyin’! Great job guys & what a way to start a weekend!

Do You Kneed Anything?
One guess what it is (no, Jesse did not self-perform any new surgeries … or operate on anyone else either!) and maybe best of all, it wasn’t caused by a box jump (I hear Rhonda, Jennifer & Brenda giving a sigh of relief!).
and I know it’s a little late, but did you know it’s a mathematical fact that fifty percent of all doctors graduate in the bottom half of their class? Funny where you mind goes when you see a picture like this.
In case you’re wondering, it’s a picture of Tom Bomkamp’s leg AFTER knee surgery — EECCKKK!
So Tom, remember when they say “Keep it elevated”, that means the leg, not the blood alcohol level. Seriously, as you rest up and heal that knee, know that you are missed, thought of warmly and wished a quick recovery from all of us here at CFE!
